The reactions which occur in the ripening of cream previous to making butter with the desired degree of aroma and flav our cause the formation of metabolic products which enter into the composition of the resulting butter. [...] The higher the acidity of the cream the shorter the keeping quality of butter. [...] The effects of acidity of serum presence of traces of heavy metals likely to enter butter from the previous prcessing operations on cream and of temperature of storage on the deterioration of the quality of butter have been investigated. [...] The first three conditions are favourable for the dissolving of the lecithin of butter in the aqueous phase and the fourth condition favours the oxidation of lecithin. [...] The steps to be taken in avoiding the development of fishiness consist of a more accurate control of the cream acidity before churning since this defines the acidity of the butter serum and minimising the amount of heavy metals dissolved by cream from plant surfaces.
