The present bulletin on Indian Casein is the first of a series which it is proposed to publish in order to make the public acquainted with the activities of the Department of Industries and to place information in a convenient form at the disposal of those who can make practical use of it. [...] Sulphuric being the cheapest acid the others presumably are used with the intention of preventing the presence in the precipitated casein of insoluble calcium sulphate. [...] " The ash content is governed primarily by the acidity of the milk from which the curd is precipitated and secondarily by the thoroughness with which the curd is washed with the natural sour method washing the curd after precipitation lowers the ash content while it has little influence in the sulphuric acid method." " As is to be expected there is a fairly close rdation between the acidity a [...] The acidity therefore is influenced by the same factors as govern the ash content namely the acidity of the milk and second by the thoroughness of washing the curd." There is no need for us to discuss these conclusions at length. [...] When casein has been properly precipitated that is when the formation of large clots of casein has been avoided by through stirring of the milk during slow addition of acid the removal of inorganic matter is brought about rapidly by washing the casein with dilute acid and the removal of acid by addition of alkali to the proper amount.
