The writers describe the distinctive property of Shoathika to consist in attaining ripeness while the seed is still in the womb " referring to the peculiarity of the aeithi rice of ripening while the panicle has not yet emerged from the sheath. [...] It is not surprising to find some differences in the moisture content of the rices—a feature which is due to differences in the atmospheric conditions at the time of the preparation of the samples. [...] A knowledge of the amount of moisture is of importance to the consumer since other things being equal the drier the rice is the larger the amount of nutritive substance does he get for his money. [...] As regards the material lost during the operation of polishing this consists of the plant embryo and some of the outer layers of the grain. [...] Ingle 2 has urged the importance of giving due consideration to the amount and composition of the ash of foods for the supply of material for the proper development of bone and of the mineral constituents necessary for vital processes factors which have as much influence on the well-being of animals as proteids carbohydrates and fats in appropriate quantities.
